Ancient Grain & Uncured Canadian Bacon Salad

This recipe is made with Jones Antibiotic Free No Sugar Canadian Bacon.

Mixed berries are a delight, but they hardly make a meal. Add Jones Canadian Bacon and greens and you have lunch!

For the ​Salad:

1 (6 oz) package Jones Canadian Bacon, small dice
1 1/2 cups red quinoa, cooked
1 1/2 cups Farro, cooked
1/4 cup toasted walnuts, chopped
1/4 cup toasted pecans, chopped
1/4 cup dried cranberries
4 scallions, green and white parts, thinly sliced
1/4 large red onion, chopped fine
2 stalks celery, chopped fine
Salt and pepper to taste

For the ​Dressing:

1/2 cup olive oil
5 tablespoons apple cider vinegar
1 small shallot, chopped fine
1 teaspoon Dijon mustard
1 tablespoon Agave syrup
Salt and pepper to taste

Toss all the salad ingredients together in a large bowl.

Whisk dressing together and add enough to coat the salad well. Reserve any unused dressing for right before serving.

Garnish with green tops of the onion.
