These fried stuffed olives get a flavorful kick with the addition of breakfast sausage. These will make the perfect snack for your next party.
1 (12 oz) Jones All Natural Pork Sausage Roll
2 tablespoons grated parmesan cheese
2 tablespoons Italian parsley, chopped
1 cup plain breadcrumbs
2 large jars of green pitted olives
2 garlic cloves, minced
1/2 teaspoon lemon zest
1/4 teaspoon salt
1/4 teaspoon black pepper
3 cup of oil for frying
Place Jones All Natural No Sugar Roll Sausage in a piping bag.
In a bowl, combine breadcrumbs, salt, pepper, lemon zest, garlic, parsley and cheese.
In another bowl whisk eggs until frothy.
In a medium sized frying pan, heat up oil (enough to cover the olives completely) at medium heat to reach 350°F.
Drain the liquid from the olives and pat dry. Using the piping bag fill the olives with the sausage.
Toss the filled olives into the whisked eggs, then into the breadcrumb mixture, making sure they are completely covered.
Place the olives into the hot oil and fry until golden brown and crispy.
