Make these Paleo-friendly frittatas next time you want brinner. Packed with Jones breakfast sausage, mushrooms and spinach.
Enjoy these main ingredient substitutions:
1 (6 oz) Jones No Sugar, Antibiotic Free, Country Style, All Natural Pork Sausage
1/3 cup green onion, sliced
1/4 cup red bell pepper, diced
1/2 cup mushroom, sliced
1 tablespoon garlic, chopped fine
2 teaspoons fresh thyme
2 cup fresh spinach
8 large eggs
1/2 teaspoon red pepper flakes
1 tablespoon chives, chopped fine
Preheat oven to 350°F. In a large ovenproof skillet, over medium heat, brown sausage. Remove sausage and reserve 2 Tbsp. of the pan drippings.
Cook green onions, red bell pepper, garlic, mushrooms and red pepper flakes until the moisture from the pan has evaporated.
Add spinach to the pan and cook until most of the moisture has evaporated.
In a large bowl beat eggs and thyme. Add the eggs to the pan stir only enough to mix egg and vegetables.
Place pan in the oven on the center rack and cook for 12 to 15 minutes.
Top with the chopped chives.
